So, after yesterday's ultra-serious post, which is really unlike my usual entry, and probably much too serious for LJ on most days, but I feel better for having posted it - let's go with something a bit more frivolous, yes?

How about a nice Fall recipe?  I made apple crisp last night, and it turned out as perfectly as it possibly could.  This is actually a blend of two different recipes from Pampered Chef, of all things (I love their Stoneware).  See, their apple crisp recipe was too tart and bland, and I'm much more fond of crisp than I am of pie, in general, so I basically took their apple pie filling and used it in their quick apple crisp recipe, and it turned out absolutely perfect.

Apple Crisp

For filling:
6 - 7 apples (about 6 cups) of whatever kind you prefer (I like a less tart crisp, so I used jonagold)
1 tsp vanilla
2 tsp lemon juice
3/4 C sugar
1 tsp cinnamon
3 T cornstarch

Peel, core, and cut apples and place in medium bowl.  Add vanilla nd lemon juice and stir to coat evenly.  In separate bowl, mix sugar, cinnamon, and corn starch.  Add to apples and stir until coated evenly.  Place apples in dish for cooking, spread evenly.  (I used a 9x9 square stoneware baker to for this, but I'm sure a 9x9 Pyrex dish would work well, too.  Or an 8x8, whatever you've got.)

For crisp:
8 graham crackers, coarsely crushed
3/4 C  packed brown sugar
1/2 C quick or rolled oats (I used quick)
1/2 C flour
1 tsp. cinnamon
1/2 C butter

Mix dry ingredients in bowl, melt butter and add to dry ingredients, mixing thoroughly.  Spread toppin evenly over apples.  Cook in Microwave on high 12-15 minutes.  (I cooked this for thirteen and the apples were nice and tender while still holding the perfect hint of firmness.)  Cool slightly before serving with vanilla ice cream.  (I added a drizzle of caramel syrup to each dish before serving as well.)

The longest part os peeling and cutting the apples.  After that, this recipe goes very quickly.  All in all, about 20 minutes to a 1/2 hour of prep work.  Enjoy!

Damn, I still need a cooking icon.  Or at least a food icon, or a baking icon or something.  I looked the other day, but didn't have any luck finding any on LJ.

MMM, I do love apple crisp. Thank you for reminding me! this is the perfect fall/winter dish, plus you feel moderately virtuous for eating a dessert with fruit in it.

Me, too! It's one of my favorite Fall desserts, pretty much a favorite, period. What's not to like? All the good stuff in pie without the icky crust. :)

I can't wait to try this! I love making apple crisp, and I've been looking for a recipe that didn't involve bisquick for a while.

Problem, though: my microwave is totally not big enough to fit a baking dish. Do you have any idea how long that might transfer to for a normal oven? *crosses fingers*

Hmm, I would do a 350 degree oven for 30-40 minutes. Check the consistency of the apples with a fork at half an hour, and go from there. Let me know how it turns out! :)
